To prepare, get these ingredients:
4 cups cooked quinoa, 3 tablespoons red wine vinegar, ⅓ cup first-cold-pressed olive oil, 4 chopped vine-ripened tomatoes, ¼ finely chopped red onion, 4 tablespoons chopped walnuts, ¼ cup finely cut fresh strawberries, ¼ cup fresh raspberries, ¼ cup finely chopped parsley, 1 tablespoon finely chopped fresh basil, 1 teaspoon finely chopped oregano, ⅛ teaspoon kosher or sea salt,⅛ teaspoon crushed black pepper, and 2 cups finely cut fresh spinach.
Optional ingredients:
⅛ teaspoon crushed red pepper.
