Cooped up and cooking: Plantain pancakes with blueberry syrup

For a bit of a brain boost, join Chef Nino for “Cooped Up Cooking” on Tuesday, December 7, at noon EST for his latest recipe, Plantain Pancakes with Blueberry Syrup. Blueberries are a well-known superfood (according to the American Heart Association - even in syrup form!), which can help when there’s a lot on your mind. #ThatsHumanCare

What you'll need:

Plaintain pancakes and blueberry syrup recipe

Gather up your syrup ingredients beforehand with this handy list: 2 cups fresh blueberries; ¼ cup water; 2 oranges squeezed (1 cup); 2 tablespoons brown sugar or honey; ¼ cup water; 3 tablespoons cornstarch; ½ teaspoon almond extract; 1 pinch cinnamon; 1 pinch kosher salt.


And for the pancakes you’ll need: 1 ripe plantain peeled and cut to 1-inch pieces; 2 eggs; 1 teaspoon vanilla; 2 tablespoons local honey; nonstick cooking spray.
