To prepare, get these ingredients: 1 pound cooked, peeled, and chopped wild-caught shrimp with tails removed, 1 stalk finely diced organic celery, ¼ cup minced fresh basil, 10 pitted and finely chopped kalamata olives, 1 minced medium organic shallot, 2 finely chopped organic green onions, 1 tablespoon finely chopped organic Italian flat-leaf parsley, 2 tablespoons olive oil mayonnaise, 1 tablespoon white wine vinegar, 1 teaspoon low-sodium cajun seasoning, 4 large ripe, organic tomatoes cut to your liking.
