Every bite will be full of leafy greens, which are loaded with folate, iron, calcium and vitamins E and K, according to Harvard Health Publishing at Harvard Medical School. What you'll need:

Spinach and Kale Frittata recipe

For this recipe, you’ll need: 1 cup fresh spinach, stems removed, or ½ ounce package frozen chopped and thawed; 1 cup fresh kale; 2 tablespoons butter or 1 tablespoon olive oil; 2 tablespoons chopped onion; 1 small clove garlic, minced; ⅓ cup shredded parmigiano Reggiano cheese or low-fat cheese of choice; ¼ teaspoon salt; dash of ground nutmeg; dash of pepper; 4 beaten eggs; 1 tablespoon butter.
