½ cup couscous, ⅔ cup orange juice, 1 can mackerel, drained, 1 (10
ounce) package frozen chopped spinach - thawed, drained and squeezed
dry, 2 egg yolks, beaten, 2 cloves garlic, crushed, 1 tsp. ground cumin, 2
tbsp. finely chopped cilantro, ½ tsp. ground black pepper, 1 tsp. paprika, ¼
tsp. cayenne pepper, ½ tsp. sea salt, 2 tbsp. olive oil mayonnaise, 3 tbsp.
cold pressed olive oil, 2 tbsp. toasted sesame seeds, bib lettuce for
wrapping
